About Wood Grains
End grain is achieved when boards are glued side by side then stood up on end to expose the end of the board (looking down the length of the tree). End grain is very dense however is the best for your knife edge since the fibers allow for the blade to pass through and is to some degree self healing, in that the small cuts on the surface of the board will show no scars.
*The process of making end grain consumes more materials, more glue and is more more time consuming.
Edge grain is achieved when boards are glued together, they are cut to size and finished. The finished cutting surface is the face or the side of the board. Edge grain construction is less dense and cheaper to produce since less materiel’s and time is consumed. The drawbacks to edge grain is the knife cuts are very visible over time and need to be sanded, it also inflicts a dulling effect of your knives since every pass has to cut wood fiber (it doesnt move like end grain)
